"This exceptional green tea—often classified as a white tea—comes from organic cultivation in one of Zhejiang province's most renowned tea gardens. It was a legendary tea for some 900 years before being 'discovered' around 1900. Harvested in the spring, this tea is considered extremely rare. It is processed entirely by hand in hot pans, where the leaves undergo a light roasting. The dry leaves resemble fresh green pine needles; they are finely twisted and offer a subtle lemongrass fragrance. Anji Bai Cha tastes pleasantly fresh, slightly sweet, and incredibly mild. Notable characteristics include its light citrusy, grassy notes and a hint of asparagus, all of which make this organic tea unique.
