How is clotted cream kept cool during transport?
We keep the clotted cream frozen until it is dispatched and send it in an insulated pack with cooling pads. This allows the clotted cream to thaw slowly during transport and should be placed in the refrigerator as soon as possible upon arrival.
Is clotted cream safe to eat when kept at room temperature for a few days?
As mentioned above, clotted cream actually has a fairly long shelf life. However, since we cannot guarantee the delivery conditions, we give a much shorter best-before date of 5 days from dispatch.
If delivery is not possible, the cream is sometimes stored in a sorting depot overnight.
This is unlikely to affect the cream. However, as we cannot guarantee that the transit conditions apply to all orders at your own risk.
What is clotted cream anyway?
Clotted cream is a type of thick cream made from unhomogenized cow's milk. The milk is heated in shallow pans and left for several hours. During this time, the cream collects on the surface and forms lumps ("clots"). Purists prefer milk from cows in Devon or Cornwall, UK. As part of cream tea, clotted cream is eaten with tea with scones and jam. It has a fat content of at least 55%. Cornish Clotted Cream is a protected designation of origin for cream that is made according to a traditional recipe in Cornwall.
