Preparation – How to Make Your Perfect Cream Tea
Serving scones:
1. Preheat oven to 190°C.
2. Warm scones for 10–12 minutes.
3. Carefully remove the clotted cream from the cup with a heated spoon (do not stir!) and place it in a bowl.
4. Halve the scones, spread generously with clotted cream, and finish with strawberry jam.
Preparing tea:
* Always use freshly boiled water.
* Preheat the teapot.
* 1 teaspoon of tea per cup (plus 1 teaspoon for the pot).
* Pour tea first, then add milk or lemon.

Clotted cream is a thick, rich cream made from unhomogenized cow's milk, heated in shallow pans and slowly cooled until the characteristic "clots" form.
Traditionally, it originates from Devon and Cornwall and has a fat content of at least 55%.
It is traditionally served with scones and jam for British cream tea.
Cornish clotted cream is a protected designation of origin for cream made using traditional methods in Cornwall.
